
Salmon Doneness: Internal temp for salmon can range from about 125 to 145 degrees Fahrenheit (personal preference). I don’t usually temp my salmon. I buy salmon from reputable places that I know have handled it safely, and then just bake it until it flakes apart easily and still looks juicy (see photos and video). If you want to cook it according to USDA recommendations, you can cook it until 145 degrees – but many chefs prefer salmon at a slightly lower temp (like 130 degrees) to retain that buttery juicines.
